Sidamo enjoys soil and climatic conditions – including altitude, rainfall and temperature – that make it perfect for the production of Arabica coffee. Here the Ethiopian coffees grow more slowly and therefore have more time to absorb nutrients and develop more robust flavors based on the local climate and soil conditions. Fully washed, this lot was grown in small villages and is agronomically organic – although not certified as such. Fresh and clean cherries arrive at washing stations where they are pulped, and allowed to ferment naturally. The fermented coffee is washed with clean running water, soaked in clean water, and then dried. In the cup, expect a perfect combination of bright acidity and medium body. You will find blueberry and vanilla notes in the light/medium roasts, and deep rich chocolate undertones in the dark roast.
