Flavor notes: caramel, lemon-lime, green apple, milk chocolate
This beautifully distinctive coffee comes from 32 small producers in the Peruvian region of Santo Domingo de la Capilla. Producers in this region are very serious about picking only the ripest cherries, so it can take up to five pickings to complete a harvest. After each picking, the cherry is pulped immediately, the parchment is fermented for approximately 12 hours, and then it is washed and dried.
Santo Domingo de la Capilla has perfect conditions for outstanding coffees: high altitudes, warm temperatures and abundant rain. Since they began producing coffee only five years ago, producers here have been more financially stable, with noticeable improvements to their living and housing conditions.
In the cup, this coffee is wonderfully complex: medium body, bright acidity, and a delightful pop of lemon-lime amidst caramel and chocolaty sweetness.
